02 - 400 g (14 oz) vegan sausages or extra-firm tofu, sliced into 2.5 cm (1 inch) pieces

04 - 1 large red onion, cut into wedges
05 - 2 medium zucchinis, sliced
06 - 2 medium carrots, sliced
07 - 200 g (7 oz) whole cherry tomatoes

09 - 1 tsp dried oregano
10 - 1 tsp smoked paprika

# Step-by-Step:
01 - Preheat the oven to 220°C (425°F) and line a large sheet pan with parchment paper.
02 - In a large bowl, add the sausages or tofu along with all prepared vegetables.
03 - Drizzle olive oil over the ingredients, sprinkle with oregano, smoked paprika, garlic powder, salt, and black pepper. Toss until evenly coated.
04 - Spread the mixture evenly in a single layer on the prepared sheet pan.
